Hearty Cilantro Lime Rice

Ingredients

  • 1 cup long-grain white rice (or basmati)
  • 2 cups water (or chicken/vegetable broth for extra flavor)
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • Zest of 1 lime
  • Juice of 1 lime (about 2 tbsp)
  • 1/2 cup fresh cilantro, finely chopped

Directions
