Hearty soy sauce marinated eggs

Soy sauce marinated eggs, often called “shoyu tamago,” are savory, umami-packed treats popular in Asian cuisine. The eggs are gently boiled, peeled, and marinated in soy sauce, sometimes with mirin, sugar, or aromatics. This process infuses the eggs with a rich, salty flavor and transforms the whites into a silky, flavorful layer while the yolks remain creamy. These eggs taste good because the soy sauce enhances the natural richness of the egg, creating a harmonious balance of salt and umami. Serve them halved over rice bowls, ramen, salads, or alongside pickled vegetables, steamed greens, or grilled meats for a satisfying meal.

Ingredients

  • 6 large eggs
  • 1 tsp salt, optional
  • 3/4 cup soy sauce (low sodium preferred)
  • 2 cups water
  • 2 tbsp mirin or substitute with 1 tbsp honey + 1 tbsp rice vinegar
  • 2-3 tbsp brown sugar or honey
  • 1-2 tbsp chili crunch, optional
  • 1 tsp sesame seeds
  • 3 cloves garlic, smashed
  • 1-inch piece fresh ginger, sliced
  • 4 green onions, sliced (or whole if you prefer)
  • 1 tsp sesame oil
  • Optional: 1 tbsp sake (for extra depth)

Directions

  1. Boil the Eggs
    Bring a pot of water to a boil. Gently add eggs and boil for 7 minutes (for jammy centers) or 9 minutes (for firmer yolks). Immediately transfer eggs to an ice bath to cool. Peel carefully.
  2. Prepare the Marinade
    In a bowl, combine soy sauce, water, mirin, sugar, garlic, ginger, scallion, sesame oil, and sake (if using. Stir until sugar dissolves.
  3. Marinate the Eggs
    Place peeled eggs in a glass jar, zip-top bag or other sealable container. Pour marinade over eggs, ensuring they’re submerged. Refrigerate for at least 2 hours, ideally overnight for deeper flavor.
  4. Serve
    Slice eggs in half. Serve over steamed rice, ramen, salads, or as a fancy appetizer. Drizzle with a little marinade and sprinkle with toasted sesame seeds or chopped scallions.
