This teriyaki chicken and pineapple sheet pan meal is a delicious blend of sweet, savory, and tangy flavors. Juicy chicken and caramelized pineapple pair perfectly with crisp bell peppers and onions, all coated in a homemade teriyaki glaze. Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 red onion (sliced)
  • 2–3 tbsp olive oil
  • Salt and pepper (to taste)
  • Sesame seeds & chopped green onions (for garnish)
  • Rice, quinoa, or cauliflower rice for serving

For the Teriyaki Sauce

  • 1/3 cup soy sauce (low sodium preferred)
  • 1/4 cup honey or brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp water
  • 2 tsp sesame oil
  • 2 garlic cloves (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp cornstarch + 2 tbsp water (for thickening, optional)

Directions

  1. Prep Oven & Pan: Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil. (optional)
  2. Make Teriyaki Sauce: In a small saucepan, combine soy sauce, honey, rice vinegar, water, sesame oil, garlic, and ginger. Bring to a simmer. If you want a thicker sauce, mix cornstarch with water and stir in; cook until thickened. Let cool.
  3. Toss Ingredients: In a large bowl, toss chicken, pineapple, bell peppers, and onion with olive oil, salt, and pepper. Drizzle half the teriyaki sauce over and toss to coat.
  4. Arrange & Bake: Spread mixture evenly on the sheet pan. Bake for 20–25 minutes, stirring halfway, until chicken is cooked through and veggies are tender.
  5. Finish & Serve: Drizzle with remaining teriyaki sauce. Toss if desired. Garnish with sesame seeds and green onions. Serve with steamed rice, quinoa, or cauliflower rice.
