Ingredients

  • 1.5 lbs. boneless, skinless chicken breasts (sliced into thin strips)

  • 2 – 3 tbsp olive oil
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • Fresh cilantro (for garnish, optional)
  • Flour or corn tortillas (for serving)
  • Optional toppings: shredded cheese, sour cream, salsa, avocado

Directions

  1. Prep the Oven & Pan: Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil for easy cleanup.
  2. Mix the Seasoning: In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, pepper.
  3. Toss Ingredients: In a large bowl, add the sliced chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle the seasoning mix over everything. Toss well until everything is evenly coated.
  4. Arrange & Bake: Spread the chicken and veggies evenly on the sheet pan. Bake for 20–25 minutes, stirring halfway, until chicken is cooked through and veggies are tender with a bit of char.
