This lemon salmon and green beans sheet pan meal delivers bright, fresh flavors with minimal effort. Ingredients

  • 4 salmon fillets (about 6 oz each), skin on or off
  • 1 lb. (about 4 cups) fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried dill or parsley (optional)
  • Lemon slices

Directions

  1. Preheat Oven: Preheat oven to 400°F (205°C). Line a large sheet pan with parchment paper or foil.
  2. Prepare Marinade: In a bowl, whisk olive oil, garlic, lemon zest, lemon juice, salt, pepper, and dill/parsley.
  3. Prep Salmon: Place salmon fillets on one side of the sheet pan. Spoon half the marinade over the salmon. Top each fillet with a lemon slice.
  4. Prep Green Beans: Toss green beans with the remaining marinade in a bowl. Spread them on the other side of the sheet pan.
  5. Roast: Bake for 15–18 minutes, until salmon flakes easily with a fork and green beans are tender-crisp.
  6. Serve: Garnish with fresh herbs and extra lemon if desired. Serve immediately.
