Ingredients
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large carrot, julienned or grated
- 1 red (yellow or green) bell pepper, thinly sliced
- 1/2 cup chopped scallions
- 1/4 cup chopped cilantro
- 1/4 cup chopped fresh mint leaves
For the Dressing
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 tablespoon sesame seeds (optional)
- Salt and black pepper to taste
Directions
- Prepare Vegetables: In a large bowl, combine shredded green cabbage, red cabbage, julienned carrot, sliced red bell pepper, chopped scallions, cilantro, and mint.
