Hearty Asian infused slaw

Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned or grated
  • 1 red (yellow or green) bell pepper, thinly sliced

  • 1/4 cup chopped cilantro
  • 1/4 cup chopped fresh mint leaves

For the Dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds (optional)
  • Salt and black pepper to taste

Directions

  1. Prepare Vegetables: In a large bowl, combine shredded green cabbage, red cabbage, julienned carrot, sliced red bell pepper, chopped scallions, cilantro, and mint.
  2. Make Dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, sesame seeds (if using), salt, and black pepper.
  3. Toss and Coat: Pour the dressing over the vegetables. Toss everything together until the slaw is evenly coated with the dressing.
