Hearty Stamppot with Kale and Sausage

Stamppot is a traditional Dutch dish which combines mashed potatoes with kale (boerenkool) and is often served with smoked sausage (rookworst). This modern version of traditional stamppot is packed with vitamins, minerals, and fiber from the kale and potatoes. Using a leaner sausage option reduces the saturated fat content, making it a heart-healthy choice. Ingredients

  • 2 pounds potatoes, peeled and cut into chunks
  • 1/2 – 1 pound kale, tough stems removed and chopped
  • 1/2 cup milk (or a dairy-free alternative)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 smoked turkey sausage or chicken sausage (for a leaner option)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon mustard (optional)

Directions

  1. Cook the Potatoes
    • Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender.
  2. Cook the Kale
    • While the potatoes are cooking, steam or boil the chopped kale for about 5-7 minutes until tender. Drain and set aside.
  3. Cook the Sausage
    • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until heated through and browned on the outside. Remove from the skillet and keep warm.
  4. Sauté the Onion and Garlic
    • In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes.
  5. Mash the Potatoes
    • Drain the cooked potatoes and return them to the pot. Add the steamed kale, sautéed onion and garlic, milk, and mustard (if using). Mash everything together until well combined. Season with salt and pepper to taste.
  6. Serve
    • Slice the sausage and serve it alongside or on top of the stamppot. Enjoy it hot.
