- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, sliced
- 2 tablespoons curry powder (or to taste)

- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- Salt and pepper to taste

Directions
- Prep Shrimp: Pat shrimp dry and season lightly with salt and pepper.
