Ingredients
For the Gyro Meat
- 1 lb. ground lamb or beef (or a mix of lamb and beef)
- 1 small onion, grated or finely chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground coriander (optional)
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 1 tsp ground black pepper
- 1 tsp salt
- 1/2 tsp paprika
For the Tzatziki Sauce
- 1 cup Greek yogurt
- 1 cucumber, peeled, seeded, and grated
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, chopped
- Salt and pepper to taste
For the Gyros
- 4-6 pita bread rounds
- 1 small red onion, thinly sliced
- 1-2 tomatoes, thinly sliced
- 1/2 cup shredded lettuce
- 1/4 cup crumbled feta cheese (optional)
Directions
- Make the Gyro Meat: Preheat your oven to 325°F (163°C). In a large bowl, combine ground meat, grated onion, garlic, and all the spices. Mix thoroughly until well combined.
- Shape and Bake: Press the meat mixture into a loaf pan, packing it tightly. Bake for 45-60 minutes, or until the internal temperature reaches 160°F (71°C). Allow the meat to rest for a few minutes, then slice thinly.
- Prepare Tzatziki Sauce: While the meat is cooking, prepare the tzatziki sauce. In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, fresh dill, salt, and pepper. Mix well and refrigerate until ready to use.
- Assemble the Gyros: Warm the pita bread in a dry skillet or microwave. Place a few slices of gyro meat on each pita, then top with tzatziki sauce, sliced red onion, tomatoes, lettuce, and feta cheese.
