Ingredients
- 2 1/2 inch thick rib pork chops
- 1/4 cup minced and mashed onion
- 1 tsp dried thyme
- 1 tsp brown sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp ground allspice
- 1/8 tsp nutmeg
- 1/8 tsp cinnamon
Directions
- prepare grill
- mince and mash onion to course paste with thyme, brown sugar, salt and spices
- pat pork chops dry and rub all over with jerk paste
- grill pork chops on an oiled rack set 5-6 inches over glowing coals
- cook 4 minutes on each side or until just cooked through
Serves 2
Double all ingredient for serving 4 if desired
