Hearty Slow Cooker Beef and Broccoli

Ingredients

  • 1 ½ pounds beef chuck, sliced into thin strips
  • 1 cup beef broth
  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 4 cups broccoli florets
  • 1 cup sliced carrots (optional)
  • Cooked white rice for serving

Directions

  1. Prepare the Sauce
    • In a bowl, mix together the beef broth, soy sauce, brown sugar, sesame oil, and minced garlic.
  2. Add Beef to Slow Cooker
    • Place the beef strips and sliced carrots in the slow cooker and pour the sauce over the top. Stir to coat the beef evenly.
  3. Cook
    • Cover and cook on low for 4-5 hours or until the beef is tender.
  4. Thicken the Sauce
    • In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the slow cooker and stir well to combine. This will thicken the sauce.
  5. Add Broccoli
    • Add the broccoli florets to the slow cooker. Cover and cook for an additional 30 minutes on high, or until the broccoli is tender.
  6. Serve
    • Serve the beef and broccoli over cooked white rice.

Tips

  • You can adjust the sweetness by adding more or less brown sugar according to your taste.
