- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 2/3 cup freshly squeezed lemon juice (about 3–4 lemons)
- Zest of 1 lemon
- Powdered sugar for dusting
Directions
- Make the crust
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, mix butter, flour, powdered sugar, and salt until crumbly.
- Press the mixture evenly into the bottom of the prepared dish.
- Bake for 18–20 minutes, or until lightly golden.
- Prepare the filling
- Whisk together the eggs, granulated sugar, flour, lemon juice, and lemon zest until smooth.
- Pour the filling over the hot crust.
- Bake the bars
- Return the dish to the oven and bake for 20–25 minutes, or until the filling is set.
- Let the bars cool completely, then refrigerate for at least 1 hour.
