Hearty Gruyere Bass

Rich, savory, and utterly delicious baked bass.

This baked bass with Gruyere cheese, onions, and mushrooms is a delightful dish that combines rich and savory flavors with a hint of sweetness from the caramelized onions. The Gruyere cheese melts beautifully, adding a creamy texture and nutty flavor that complements the tender and flaky bass. The sautéed mushrooms bring an earthy depth, while the white wine infuses a subtle complexity.Serve this dish with a side of steamed asparagus or roasted vegetables to balance the richness. Ingredients

  • 4 bass fillets
  • 1 cup Gruyere cheese, grated
  • 1 medium onion, thinly sliced
  • 1/2 lb. mushrooms, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Preheat Oven: Preheat your oven to 400°F.
  2. Sauté Vegetables: In a large skillet, heat the butter over medium heat. Add the sliced onions and cook until they begin to caramelize, about 10 minutes. Add the garlic and mushrooms and sauté until the mushrooms are tender and the mixture is fragrant, about 5 more minutes.
  3. Add 1/2 the Vegetables and Cheese: Spoon half the sautéed onion and mushroom mixture into a greased baking dish. Sprinkle half the grated Gruyere cheese evenly over these vegetables.
  4. Prepare the Fish: Rinse the fish and pat them dry. Season the bass fillets with salt and pepper. Fold them in half and place them on top of the cheese and vegetables base layer.
  5. Add Remaining Vegetables and Cheese: Spoon the other half of the sautéed onion and mushroom mixture over the bass fillets. Sprinkle the grated Gruyere cheese evenly over the fish. Sprinkle the paprika evenly over the cheese.
  6. Bake: Bake in the preheated oven for 20 minutes, or until the fish flakes easily with a fork
  7. Broil: Remove the dish from the oven and turn oven to Broil (High). Broil 3 inches from the heat until the cheese bubbles, about 1 minute.
  8. Garnish and Serve: Garnish with chopped fresh parsley and serve immediately.
