Hearty Banana Cream Pie

Ingredients

  • Crust
    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup unsalted butter, chilled and cut into small cubes
    • 1/4 cup ice water (more if needed)
  • Filling
    • 3/4 cup granulated sugar
    • 1/3 cup all-purpose flour
    • 1/4 teaspoon salt
    • 2 1/2 cups whole milk
    • 3 large egg yolks, beaten
    • 2 tablespoons unsalted butter
    • 1 teaspoon vanilla extract
    • 4-5 ripe bananas, sliced
  • Topping
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract

Directions

  1. Prepare the Crust
    • In a large bowl, mix together flour and salt.
    • Add the chilled butter cubes to the bowl. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough starts to come together. Add more water if necessary.
    • Gather the dough into a ball, flatten it into a disk, and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes.
  2. Roll Out and Bake the Crust
    • Preheat your oven to 375°F (190°C).
    • On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Carefully transfer the dough to the pie dish, pressing it evenly into the bottom and up the sides. Trim any excess dough.
    • Prick the bottom and sides of the crust with a fork to prevent bubbling.
    • Line the crust with parchment paper and fill it with pie weights or dried beans.
    • Bake for 15 minutes. Remove the parchment paper and weights, and bake for an additional 10-12 minutes, or until the crust is golden brown.
    • Let the crust cool completely before adding the banana cream filling.
  3. Make the Filling
    • In a medium saucepan, whisk together sugar, flour, and salt. Gradually whisk in the milk.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute.
    • Remove from heat. In a small bowl, beat egg yolks. Gradually whisk in 1/2 cup of the hot milk mixture to temper the yolks.
    • Slowly pour the egg mixture back into the saucepan, whisking constantly.
    • Return to heat and cook for 2 more minutes, stirring constantly.
    • Remove from heat and stir in butter and vanilla extract. Let the mixture cool slightly.
  4. Assemble the Pie
    • Arrange a layer of sliced bananas on the cooled crust.
    • Pour half of the filling over the bananas, spreading evenly.
    • Add another layer of sliced bananas and top with the remaining filling.
    • Cover the pie with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
    • Refrigerate for at least 4 hours, or until set.
  5. Prepare the Topping
    • In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
    • Spread or pipe the whipped cream over the chilled pie.
  6. Serve and Enjoy
    • Garnish with extra banana slices, if desired.
    • Slice and serve chilled.

Storing Banana Cream Pie

  1. Refrigerate: Once your pie is fully set and topped with whipped cream, cover it with plastic wrap or aluminum foil to prevent it from absorbing any fridge odors.
  2. Store: Place the covered pie in the refrigerator. It will keep well for about 3-4 days.
  3. Avoid Freezing: Freezing is not recommended as it can negatively affect the texture of the custard and whipped cream.

  1. Oh my gosh, I haven’t had banana cream pie for years, and that photo really brings it back.
