
Indulge in the sublime allure of my favorite creamy potato soup, a culinary masterpiece that elevates comfort to an art form. Ingredients
- 8 medium or 6 large peeled potatoes, chunked and chopped
- 1 1/4 stick of salted butter
- 1 1/2 cups celery chopped
- 1 1/2 cups carrots chopped
- 1 medium to large onion chopped
- 1 tall 12 oz or 2 small 8 oz heavy whipping cream or equivalent amount of milk of your choice
- 1 Polska kielbasa sliced and then quartered
- 2 tablespoons Italian seasoning
- 2 tablespoons parsley
- Salt & pepper to taste
Directions
- Peel and chop potatoes
- Chop vegetables to desired sizes
- Boil potatoes in large soup pot of water with pinch of salt until tender but not mush
- Saute vegetables in 1/4 stick of butter until onions are translucent and rest of vegetables are tender
- Using a large colander, drain water from potatoes once cooked
- Add 1 stick of butter to pot, melt fully in bottom of pot
- Add potatoes back to butter in pot and with masher 3/4 mash the potatoes, leave some chunks
- Add heavy whipping cream (or milk of your choice) to desired consistency, I like the soup thick and hardy but any consistency is fine. Save a bit of the heavy whipping cream for reheating the soup leftovers
- Add vegetables to potato soup
- Add chopped Polska kielbasa
- Add Italian seasoning, parsley, salt and pepper to your preferred taste
- Combine and heat to just below boiling, simmer for 15-20 minutes, stirring well as not to let bottom scald

This soup reheats really well if you add just a bit more of heavy whipping cream each time you reheat it.
