This Slow Cooker Thai Chicken is a flavorful and easy-to-make dish featuring tender chicken simmered in a rich coconut milk and peanut butter sauce with aromatic spices. Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1.5 tablespoons sesame oil
  • 1 cup full fat coconut milk (canned)
  • 1/2 cup chunky peanut butter
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tsp crushed red pepper flakes
  • 2 tablespoons red curry paste (optional) (adjust to taste)
  • 1 red bell pepper, sliced (optional)
  • 1 cup carrots, julienned (optional)
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 4 tablespoons chopped peanuts (for serving)
  • Lime wedges (for serving)
  • Cooked rice or quinoa (for serving)

Directions

  1. Prepare the Sauce
    • In a bowl, whisk together the sesame oil, coconut milk, peanut butter, soy sauce or coconut aminos, honey, lime juice, garlic, red pepper flakes, and ginger until smooth.
  2. Add Ingredients to Slow Cooker
    • Place the chicken in the slow cooker in an even layer. Pour the sauce over the chicken, ensuring it is well coated. Add the sliced bell pepper and carrots on top.
  3. Cook
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  4. Serve
