- 1 small onion, thinly sliced
- 1 cup bean sprouts
- 1/4 cup chopped peanuts
- 3 green onions, sliced
- 1/4 cup cilantro, chopped

Pad Thai Sauce
- 3 tablespoons fish sauce
- 1 1/2 tablespoons soy sauce
- 2 tablespoons tamarind paste (for that essential tangy flavor)
- 1 tablespoon brown sugar (adjust to taste)
- 1 tablespoon lime juice
- 1/2 teaspoon chili flakes (optional, for heat)
Directions
- Prepare the noodles: Cook the rice noodles according to package instructions, usually soaking them in warm water for about 20-30 minutes until softened but firm. Drain and set aside.
- Make the sauce: In a small bowl, whisk together the fish sauce, soy sauce, tamarind paste, brown sugar, lime juice, and chili flakes. Taste the sauce and adjust the sweetness or tanginess according to your preference.
- Cook the chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add the chicken strips and cook until browned and fully cooked (about 5-6 minutes). Remove the chicken from the pan and set aside.
