Hearty Fate cupcakes

Ingredients

  • 1 1/2 cups (200g) unsalted butter, softened
  • 200g caster sugar
  • 4 large eggs
  • 1 1/2 cups 200g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • Jam (strawberry or raspberry)
  • Whipped cream

Directions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tray with paper cases.
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Sift in the flour and baking powder, then fold into the mixture.
  5. Add the milk and vanilla extract and mix until smooth.
  6. Divide the mixture evenly among the cupcake cases.
  7. Bake for 15-20 minutes or until a skewer inserted into the center comes out clean.
  8. Cool the cupcakes on a wire rack.
  9. Cut a small hole in the top of each cupcake and fill with a teaspoon of jam and a dollop of whipped cream.
  10. Insert a charm into each cupcake before replacing the cut-out piece of cake.
    • The pull should be left outside the cake if using without attachment outside cake.
    • I like to attach a cake friendly pull from the pull charm inside to a plastic charm on top the cupcake, so they don’t get lost.
