Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots (about 5 large carrots)
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

Cream cheese frosting ingredients

  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (optional, for consistency)

Cake directions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat together the oil, granulated sugar, brown sugar, eggs, and vanilla until smooth and well-combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in the grated carrots, crushed pineapple, and optional nuts and raisins.
  6. Divide the batter evenly between the two prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.

Frosting directions

  1. Beat the cream cheese and butter together until smooth and creamy.
  2. Gradually add in the powdered sugar, 1 cup at a time, and beat until well combined.
  3. Add the vanilla extract and mix until smooth.
  4. If needed, add 1-2 tablespoons of milk to reach the desired frosting consistency.

To assemble

  1. Place one cake layer on a serving plate and spread a thick layer of cream cheese frosting over the top.
  2. Place the second layer on top and frost the entire cake, covering the sides and top.
  3. Optional: Decorate with chopped nuts or carrot shavings for garnish.
