Hearty Blueberry Crumble

This Blueberry Crumble is a delightful and easy dessert that showcases the natural sweetness of frozen blueberries. Ingredients

  • 4 cups frozen blueberries
  • 1/4 cup sugar or honey (adjust to taste)
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

For the crumble topping

  • 1 cup rolled oats or granola
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, melted

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the blueberry filling
    • In a large bowl, combine the frozen blueberries, sugar, lemon juice, cornstarch, and vanilla extract. Stir until the blueberries are evenly coated.
  3. Make the crumble topping
    • In another bowl, mix the oats, flour, brown sugar, salt, and cinnamon. Add the melted butter and stir until the mixture becomes crumbly.
  4. Assemble
    • Pour the blueberry mixture into a greased baking dish.
    • Spread the crumble topping evenly over the blueberries.
  5. Bake
    • Bake for 35-40 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  6. Cool and serve
    • Let the crumble cool for a few minutes before serving. It’s delicious with a scoop of Greek yogurt, vanilla ice cream or whipped cream.
