Ingredients
- 1 large whole wheat tortilla
- 4 slices of deli turkey (preferably low sodium)
- ½ ripe avocado, sliced or mashed
- 1 handful of fresh spinach or mixed greens
- 2 slices of tomato
- 1 slice of cheese (optional, cheddar or provolone works well)
- 1 strip of cooked bacon (optional)
- 1/4 cup of bell pepper slices (optional)
- 1 tablespoon of hummus or mayonnaise (optional)
- Salt and pepper, to taste
- A dash of lemon juice (optional, to keep the avocado fresh)
Directions
- Prepare the tortilla: Lay the whole wheat tortilla flat on a clean surface.
- Spread the base: If using, spread a thin layer of hummus or mayonnaise over the tortilla.
- Add turkey: Lay the turkey slices in the center of the tortilla.
- Add avocado: Place the sliced or mashed avocado on top of the turkey. If you’re worried about the avocado browning, you can sprinkle a dash of lemon juice over it.
- Add veggies: Layer the spinach or mixed greens and the tomato slices over the avocado.
