Hearty spinach chicken parmesan

This Spinach Chicken Parmesan combines tender, crispy chicken breasts with a flavorful breadcrumb and Parmesan coating, layered with sautéed spinach, marinara sauce, and melted mozzarella. Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (or panko)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 large egg, beaten
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 2 cups fresh spinach, chopped
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 400°F (200°C).
  2. Mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper in a shallow dish.
  3. Dip each chicken breast in beaten egg, then coat in the breadcrumb mixture.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden.
  5. Remove from heat, top each chicken breast with chopped spinach, marinara sauce, and shredded mozzarella.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
