Hearty egg casserole

Tasty sausage and spinach breakfast casserole. 

This sausage and spinach breakfast casserole is a delightful combination of savory sausage, fresh spinach, and creamy Cheddar cheese, all baked together with eggs and milk. Ingredients

  • 1 pound breakfast sausage
  • 1 medium onion, finely chopped
  • 4 cups fresh spinach, chopped or 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 10 large eggs
  • 1 cup milk
  • 2 cups shredded Monterey jack or Cheddar cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the sausage: In a large skillet over medium-high heat, cook the sausage and onion until the sausage is browned and crumbly. Drain any excess grease.
  3. Add spinach: Stir in the spinach, cooking until any excess moisture is evaporated.
  4. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, 1 cup of Cheddar cheese, oregano, salt, and pepper.
  5. Combine ingredients: Add the sausage and spinach mixture to the egg mixture, stirring until well combined.
  6. Assemble the casserole: Pour the mixture into the prepared baking dish. Sprinkle the remaining 1 cup of Cheddar cheese on top.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
  8. Serve: Let the casserole cool for a few minutes before slicing and serving.
