Hearty gelato recipe

Creamy gelato, endless flavors, indulgent treat.

Gelato is a rich, creamy Italian dessert made with milk, cream, and egg yolks, offering a smooth texture and an indulgent treat. Unlike traditional ice cream, gelato has less fat and air, resulting in a denser and more flavorful experience. The basic recipe is versatile, allowing for endless flavor possibilities. Classic choices include vanilla, chocolate, and fruit purees like strawberry or mango. Nut-based flavors such as pistachio or hazelnut add richness, while coffee or caramel create a deeper taste. For a refreshing twist, citrus zest or mint can be infused, making gelato a perfect customizable dessert for any occasion.

When making gelato, precise measurements ensure the perfect balance of creaminess and flavor. Typically, gelato uses 2 cups of whole milk, 1 cup of heavy cream, ¾ cup of sugar, and 4 egg yolks as a base. The magic of gelato comes from its versatility in flavoring. For vanilla, add 1 tsp of vanilla extract. For chocolate, melt 4 oz of chocolate into the milk mixture. Fruit purees, such as 1 cup of mango or strawberry, should be added during the cooling phase. Nut-based gelatos, like pistachio or hazelnut, use ½ cup of nut paste for an authentic, rich flavor. Adjusting sugar or extract based on flavor intensity ensures a well-balanced, delicious gelato.

Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup sugar
  • 4 large egg yolks
  • 1 tsp vanilla extract (or other flavoring options like 4 oz. chocolate, 1 cup fruit puree, or 1/2 cup nut paste)

Directions

  1. Heat the Milk and Cream: In a medium saucepan, combine milk and cream. Heat over medium-low heat until just simmering. Remove from heat.
  2. Whisk the Egg Yolks and Sugar: In a bowl, whisk the egg yolks and sugar until pale and creamy.
  3. Temper the Egg Mixture: Slowly pour a little of the hot milk mixture into the egg yolk mixture, whisking constantly. Gradually add the rest, whisking until combined.
  4. Cook the Mixture: Pour the mixture back into the saucepan. Cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-8 minutes). Do not let it boil.
  5. Add Flavoring: Stir in vanilla extract or other flavorings of your choice.
  6. Chill the Mixture: Transfer the mixture to a bowl and let it cool. Cover and refrigerate for at least 4 hours or overnight.
  7. Churn the Gelato: Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions, until it reaches a soft, creamy consistency.
  8. Freeze: Transfer the gelato to a container and freeze for at least 2 hours to firm up before serving.
