Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup rice (uncooked)
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup water or chicken broth (or chicken stock)
  • 1 cup low-fat shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Directions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Caramelize Onions: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized (about 20-25 minutes). Add garlic and thyme, and cook for an additional 1-2 minutes. Remove from heat.
  3. Prepare Chicken: While the onions are caramelizing, season the chicken breasts with paprika, salt, and pepper. Cut each chicken breast into 3-4 pieces.
  4. Assemble the Bake
    • In a large baking dish, spread the uncooked rice evenly.
    • Pour the chicken broth and water over the rice.
    • Place the chicken breasts on top of the rice.
    • Spread the caramelized onions evenly over the chicken and rice.
  5. Bake
    • Cover the baking dish tightly with foil and bake in the preheated oven for 45-50 minutes, or until the rice is tender and the chicken is cooked through (internal temperature should reach 165°F/74°C).
  6. Add Cheese
    • Uncover the dish and sprinkle the shredded mozzarella cheese over the top.
    • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve
    • Remove the dish from the oven and let it rest for a few minutes.
    • Sprinkle with fresh parsley before serving.

Tips

  • For Extra Flavor: You can use a mixture of low-sodium beef and chicken broth for a richer taste.
  • Veggie Boost: Add mushrooms or spinach to the dish before baking for extra nutrition.
  • Lower Carb Option: Replace the brown rice with cauliflower rice, adjusting the liquid amount accordingly.
