Ingredients

For the Crust

  • 1 package of refrigerated sugar cookie dough (16.5 oz)
  • 2 tablespoons of flour (optional, to prevent sticking)

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

For the Toppings

  • 1/2 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup kiwi slices
  • 1/2 cup mandarin orange segments
  • 1/2 cup raspberries
  • 1/2 cup pineapple chunks

For the Glaze

  • 1/4 cup apricot preserves
  • 1 tablespoon water

Directions

1. Prepare the Crust

  • Preheat the oven to 350°F (175°C).
  • On a lightly floured surface, roll out the cookie dough into a 12-inch circle (about 1/4 inch thick). Alternatively, you can press the dough into a 12-inch pizza pan or a round baking sheet.
  • Bake the cookie crust for 10-12 minutes, or until golden brown. Let it cool completely.

2. Make the Cream Cheese Frosting

  • In a medium bowl, mix together the softened cream cheese, sugar, and vanilla extract until smooth and creamy.

3. Assemble the Pizza

  • Once the cookie crust has cooled, spread the cream cheese frosting evenly over the crust.
  • Arrange the sliced fruit on top of the frosting in a visually pleasing pattern. You can be creative with your design!

4. Prepare the Glaze

  • In a small saucepan, heat the apricot preserves and water over low heat until melted and smooth.
  • Brush the glaze over the fruit to give it a shiny finish and to help preserve the fruit.

5. Serve

  • Slice the fruit pizza like a traditional pizza and serve chilled.

Tips

  • You can customize the fruit toppings based on what’s in season or your personal preference.
  • For a healthier option, you can use a homemade whole wheat cookie dough or a graham cracker crust.
