Hearty crepes

Delicate and versatile egg wrappers.

Crepes are a culinary delight known for their delicate, paper-thin texture and versatility. Their light, slightly crisp edges and tender center create a satisfying contrast. Made from the simple ingredients: flour, eggs, milk, and butter, they offer a subtly sweet or neutral base that complements both sweet and savory fillings. The magic lies in the batter’s smoothness, allowing for even cooking and a melt-in-your-mouth experience. Whether filled with fresh fruit, creamy cheese, or savory meats, crepes adapt to a variety of flavors, making them a versatile dish that’s both indulgent and surprisingly light. Their elegance and flavor make them a beloved treat worldwide.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter (plus extra for cooking)
  • 1 tablespoon sugar (optional, for sweet crepes)
  • 1/4 teaspoon salt

Directions

  1. Prepare the Batter
    • In a large bowl, whisk together the flour, eggs, milk, melted butter, sugar (if using), and salt until smooth. You can also use a blender for this step for a very smooth batter.
  2. Rest the Batter
    • Let the batter rest for at least 30 minutes at room temperature. This helps to ensure the crepes are tender.
  3. Heat the Pan
    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a bit of butter or oil.
  4. Cook the Crepes
    • Pour about 1/4 cup of batter into the center of the pan. Quickly tilt and swirl the pan to spread the batter evenly into a thin, even layer.
    • Cook for 1-2 minutes or until the edges start to lift and the bottom is golden brown. Flip and cook for an additional 30 seconds to 1 minute on the other side.
  5. Serve
    • Transfer the crepe to a plate and cover with a kitchen towel to keep warm while you cook the remaining crepes.
  6. Fill and Enjoy
    • Fill with your favorite sweet or savory fillings. For sweet crepes, you can use fresh fruit, Nutella, or a sprinkle of powdered sugar. For savory crepes, try ham, cheese, or sautéed vegetables.
