Ingredients
- 3 cups cooked rice (preferably day-old and chilled)
- 2 tablespoons avocado oil
- 2 eggs, beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup cooked chicken, shrimp, or tofu (optional)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Directions
- Prepare the Rice
- If using freshly cooked rice, spread it out on a baking sheet to cool and dry out slightly.
- Cook the Eggs
- Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
- Sauté the Aromatics
