Ingredients

  • 8 oz (about 225g) protein, whole wheat or gluten-free pasta (such as penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, or orange), diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup crumbled feta cheese (optional, omit for vegan version)
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped

For the dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon honey (or maple syrup for vegan version)
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell peppers, red onion, feta cheese (if using), basil, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, honey (or maple syrup), dried oregano, salt, and pepper to make the dressing.
  4. Add the cooled pasta to the bowl of vegetables. Pour the dressing over the pasta and vegetables, tossing gently to combine and coat everything evenly.
  5. Taste and adjust seasoning if needed. You can chill the salad in the refrigerator for about 30 minutes to allow the flavors to meld before serving.
