Ingredients
- 8 oz (about 225g) protein, whole wheat or gluten-free pasta (such as penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers (red, yellow, or orange), diced
- 1/2 cup red onion, finely chopped
- 1/2 cup crumbled feta cheese (optional, omit for vegan version)
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley leaves, chopped
For the dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon honey (or maple syrup for vegan version)
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Directions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool down. Set aside.
- In a large bowl, combine the cherry tomatoes, cucumber, bell peppers, red onion, feta cheese (if using), basil, and parsley.
