Hearty Matcha Energy Bites

These matcha energy bites taste delicious due to the perfect blend of sweet Medjool dates, creamy cashews, and earthy matcha powder. Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup raw cashews
  • 1/2 cup rolled oats
  • 1 tbsp matcha powder
  • 2 tbsp coconut oil, melted
  • 1/4 cup unsweetened shredded coconut
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • Pinch of salt

Directions

  1. Prepare the Dates
    • Place the pitted Medjool dates in a food processor and pulse until they form a sticky paste.
  2. Add Cashews and Oats
    • Add the raw cashews and rolled oats to the food processor. Pulse until they are coarsely chopped and well combined with the dates.
  3. Incorporate Matcha and Other Ingredients
    • Add the matcha powder, melted coconut oil, shredded coconut, chia seeds, vanilla extract, and a pinch of salt to the mixture. Pulse until everything is thoroughly combined and the mixture starts to clump together.
  4. Form the Energy Bites
    • Use your hands to roll the mixture into small balls, about 1 inch in diameter. If the mixture is too sticky, you can slightly dampen your hands to make rolling easier.
  5. Chill
    • Place the energy bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.
  6. Store:
    • Transfer the chilled energy bites to an airtight container. They can be stored in the refrigerator for up to 1 week or in the freezer for up to 3 months.
