Hearty high protein peanut butter cups

Homemade high-protein peanut butter cups combine the rich, creamy flavor of natural peanut butter with a delightful chocolate coating, offering a satisfying blend of sweet and salty. They contain fewer additives and preservatives then store bought, allowing for healthier ingredients like organic peanut butter and dark chocolate. The added protein boosts nutritional value, supporting muscle repair and satiety. Plus, they often contain less sugar and unhealthy fats, making them a more wholesome snack that aligns with fitness and wellness goals without compromising on taste.

Ingredients

For the chocolate layer

  • 1 cup of dark chocolate chips (or chopped dark chocolate)
  • 2 tablespoons of coconut oil

For the peanut butter filling

  • 1/2 cup of natural peanut butter (creamy or crunchy)
  • 2 tablespoons of honey or maple syrup
  • 1/4 cup of protein powder (vanilla or chocolate flavored)

Directions

  1. Line a mini muffin tin with paper or silicone liners.
  2. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together in 30-second intervals, stirring in between, until smooth and well combined. Alternatively, you can melt the chocolate and coconut oil in a double boiler on the stove.
  3. Spoon about 1 teaspoon of the melted chocolate mixture into the bottom of each muffin cup, spreading it evenly to cover the bottom.
  4. Place the muffin tin in the freezer for about 10 minutes to allow the chocolate layer to set.
  5. While the chocolate layer is setting, prepare the peanut butter filling. In a mixing bowl, combine the peanut butter, honey or maple syrup, and protein powder until smooth and well combined.
  6. Remove the muffin tin from the freezer and spoon about 1 teaspoon of the peanut butter filling on top of each chocolate layer, spreading it out evenly.
  7. Once again, spoon about 1 teaspoon of the melted chocolate mixture on top of each peanut butter layer, covering it completely.
  8. Return the muffin tin to the freezer and let the peanut butter cups set for at least 30 minutes, or until firm.
  9. Once set, remove the peanut butter cups from the muffin tin and store them in an airtight container in the refrigerator until ready to serve.
