Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup sunflower seed butter (or other nut-free butter alternatives like soy butter or tahini)
  • 1/3 cup honey or maple syrup
  • 1/2 cup mini chocolate chips or raisins
  • 1/4 cup ground flaxseed or chia seeds
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: 1/4 cup shredded coconut, dried cranberries, or other mix-ins of your choice

Directions

  1. Mix Ingredients: In a large bowl, combine the oats, sunflower seed butter, honey (or maple syrup), mini chocolate chips (or raisins), ground flaxseed (or chia seeds), vanilla extract, and salt. If using any optional mix-ins like shredded coconut or dried cranberries, add them now.
  2. Combine Thoroughly: Use a spoon or spatula to mix everything together until well combined. The mixture should be sticky enough to hold together when pressed.
  3. Chill Mixture: Place the bowl in the refrigerator for about 20-30 minutes. This will make the mixture easier to handle and roll into balls.
  4. Form Balls: Once chilled, use your hands to roll the mixture into bite-sized balls, about 1 inch in diameter.
  5. Store: Store the energy bites in an airtight container in the refrigerator for up to a week. They can also be frozen for longer storage.

Tips

  • If the mixture is too dry, add a bit more honey or sunflower seed butter.
  • If the mixture is too sticky, add a bit more oats or flaxseed.
