Ingredients
For the Meatballs
- 1 pound (450g) ground beef
- 1 pound (450g) ground turkey
- 1 teaspoon minced garlic
- 1/3 cup flour of your choice
- 1 tablespoon chia seeds
- 1/2 onion, minced
- 2 tablespoons Dijon mustard
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 large eggs
- 1/4 teaspoon salt
- 2 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- fresh parsley for garnish, chopped
For the Gravy
- 1 tablespoon butter (or ghee)
- 2 teaspoons xanthan gum (or cornstarch)
- 3 tablespoons all-purpose flour
- 1 cup low sodium beef or chicken stock
- 1 can 15 oz full fat coconut milk (or 1 3/4 cup heavy whipping cream)
- 1 teaspoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 -2 tablespoons black pepper to taste
- Salt to taste
Directions
- Preheat Oven and Prepare Pan or Baking Sheet
- Preheat oven to 400 degrees.
- Lightly spray a large pan or baking sheet with non-stick spray, set aside.
- Prepare the Meatballs
- In a large mixing bowl, combine ground beef, ground turkey, flour, chopped onion, eggs, Dijon mustard, chia seeds, and meat seasonings. Mix until well combined.
- Shape the mixture into small meatballs, about 2 inches in diameter.
- Place on pan, spacing evenly for even cooking.
- Bake the Meatballs
- Bake meatballs for 25-30 minutes until cooked through.
- Make the Gravy
- In a large skillet, melt butter. Whisk in xanthan gum (or cornstarch) and flour to form a roux.
- Gradually whisk in the beef or chicken stock, ensuring there are no lumps. Add the coconut milk (or heavy cream), Dijon mustard, Worcestershire sauce, black pepper, and salt. Continue to whisk and simmer sauce until the sauce thickens.
- Season the gravy with salt and black pepper to taste.
- Combine and Serve
- Add the cooked meatballs to the gravy, making sure they are coated evenly. Allow them to simmer in the sauce for a few minutes.
- Serve the Swedish meatballs over mashed potatoes, noodles, or rice. Garnish with chopped fresh parsley if desired.
