- 1 can (10.5 ounces) cheddar cheese soup
- 1 pint of sour cream
- 1 small onion, finely chopped
- 2 cups shredded cheddar cheese
- 5-6 strips of cooked bacon, crumbled (optional), reserve 2 strips, crumbled (for topping)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cornflakes, crushed (for topping) (optional)
- Additional melted butter (about 1/4 cup, for topping)
- Chives, chopped (optional for garnish)
Directions
- Preheat crockpot
- Grease the slow cooker with non-stick cooking spray.
- Mix ingredients
- In a large bowl, combine potatoes, melted butter, condensed cream of chicken soup, cheddar cheese soup, sour cream, chopped onion, shredded cheddar cheese, bacon if using, salt, and black pepper. Mix well.
- Layer in crockpot
- Transfer the mixture into the slow cooker, spreading it evenly.
- Prepare topping
- In a separate bowl, mix crushed cornflakes with melted butter.
- Top the potatoes
- Sprinkle the cornflake mixture evenly over the top of the potato mixture in the slow cooker.
