Ingredients

  • 2 cups (4 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 cups light brown sugar, packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 5 cups blended old-fashioned rolled oats
  • 24 ounces semi-sweet chocolate chunks (and or chips)
  • 8 ounces grated milk chocolate (or chocolate bar)
  • 3 cups chopped nuts (your choice) (optional)

Directions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Add oatmeal to a blender and blend. Blend to a fine powder (or your desired consistency).
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, blended oats, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Stir in chocolate chunks, and grated milk chocolate until evenly distributed throughout the dough.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie.
  9. Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown but the centers are still soft.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Feel free to customize the recipe by adding other mix-ins if you like. I like to add some white chocolate chunks to this as well.
