Ingredients
- 2 cups (4 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 2 cups light brown sugar, packed
- 4 large eggs

- 1 teaspoon salt
- 5 cups blended old-fashioned rolled oats
- 24 ounces semi-sweet chocolate chunks (and or chips)
- 8 ounces grated milk chocolate (or chocolate bar)
- 3 cups chopped nuts (your choice) (optional)
Directions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- Add oatmeal to a blender and blend. Blend to a fine powder (or your desired consistency).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, blended oats, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in chocolate chunks, and grated milk chocolate until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving enough space between each cookie.
- Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown but the centers are still soft.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
