A Paloma is one of Mexico’s most beloved cocktails, arguably more popular than the margarita in its home country. The magic is in the balance of bitter grapefruit, bright lime, and the subtle herbal depth of good tequila, all lifted by the effervescence of sparkling grapefruit soda. The salt rim adds a savory contrast that makes every sip more complex. Served over ice in a tall glass, it is refreshing without being cloying, sophisticated without being fussy. Classic Paloma ingredients

  • 2 oz blanco tequila
  • 1/2 oz fresh lime juice

  • 4 oz grapefruit soda (Jarritos or Squirt preferred)
  • Ice
  • Grapefruit wedge or slice for garnish
  • Coarse salt or Tajin for the rim (optional)

Directions

Classic Paloma

  1. Run a lime wedge around the rim of a tall glass and dip into coarse salt or Tajin if desired.
  2. Fill the glass with ice.
  3. Pour in the tequila and lime juice.
  4. Add a pinch of salt directly into the glass.
  5. Top with grapefruit soda and stir gently once to combine.
  6. Garnish with a grapefruit wedge and serve immediately.

Fresh Paloma (elevated version — 2nd option)

  1. Rim a tall glass with salt or Tajin if desired and fill with ice.
  2. In a cocktail shaker with ice, combine tequila, fresh grapefruit juice, lime juice, and simple syrup.
  3. Shake well for about 15 seconds.
  4. Strain into the prepared glass over fresh ice.
  5. Top with club soda and stir gently.
  6. Garnish with a grapefruit slice and a sprig of fresh mint.

Tips and variations

  • Tequila choice matters: A quality blanco like Espolon, Olmeca Altos, or Casamigos works beautifully. A reposado adds a warm, oaky note if you prefer a richer drink.
  • Mezcal swap: Replace tequila with mezcal for a smoky, earthy Paloma variation.
  • Spicy Paloma: Add 2 to 3 slices of fresh jalapeno to the shaker and muddle lightly before adding other ingredients.
