Hearty chicken tenders casserole

This casserole works beautifully because frozen chicken tenders bake up juicy and tender while absorbing the creamy, savory sauce around them. The combination of melted cheese, a rich cream base, and soft vegetables creates layers of comfort in every bite. Using frozen tenders skips the prep work entirely and makes this a true weeknight hero. Serve it straight from the baking dish with a crisp green salad, buttered dinner rolls, or steamed broccoli on the side. It reheats well the next day, making it a great candidate for meal prep or feeding a crowd with minimal effort.

Ingredients

Casserole Base

  • 1 bag (about 24 oz) frozen chicken tenders, unthawed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Vegetables

  • 1 cup frozen peas or mixed vegetables
  • 1/2 cup diced onion
  • 1/2 cup diced celery (optional)

Topping

  • 1 1/2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers or seasoned breadcrumbs
  • 2 tablespoons melted butter

Directions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Stir the diced onion, celery, and frozen vegetables into the sauce mixture.
  4. Pour half of the sauce mixture into the bottom of the prepared baking dish and spread it evenly.
  5. Lay the frozen chicken tenders in a single layer over the sauce.
  6. Pour the remaining sauce over the top of the chicken tenders, spreading it to cover them completely.
  7. Sprinkle the shredded cheddar cheese evenly over the sauce layer.
  8. In a small bowl, combine the crushed crackers or breadcrumbs with the melted butter and toss until coated. Sprinkle this mixture evenly over the cheese.
  9. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 to 20 minutes, until the topping is golden brown and the casserole is bubbling around the edges.
  11. Let the casserole rest for 5 to 10 minutes before serving.

Tips and variations

  • You can swap cream of celery soup for either of the canned soups for a slightly different flavor profile.
  • Add a layer of cooked egg noodles or rice beneath the chicken tenders to make it a complete one-dish meal.
  • Stir in a small can of drained diced green chiles for a mild kick.
  • Substitute Gruyere or Monterey Jack for the cheddar for a creamier, more complex melt.
  • Frozen broccoli florets work especially well in place of or alongside the peas.
  • Leftovers keep well refrigerated for up to 4 days and reheat nicely in a 350 degree oven covered with foil.
  • For a lighter version, use reduced-fat sour cream and low-sodium soups.
