This turkey meatball and roasted vegetable sheet pan meal is comforting, nutritious, and packed with flavor. The turkey meatballs are tender and savory, seasoned with herbs and Parmesan, while the roasted vegetables develop a sweet, caramelized taste. Ingredients
- For the Meatballs
- 1 lb. ground turkey
- 1/3 cup breadcrumbs
- 1 egg
- 2 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped) or 1 tsp dried
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 cup grated Parmesan (optional)
- For the Vegetables
- 2 cups broccoli florets and or cauliflower
- 1 bell pepper (sliced)
- 1 zucchini (sliced)
- 1 red onion (sliced)
- 2–3 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- Rice, quinoa for serving (optional)
Directions
- Prep Oven & Pan: Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil. (optional)
- Make Meatballs: In a bowl, mix ground turkey, breadcrumbs, egg, garlic, parsley, salt, pepper, oregano, and Parmesan. Form into 1-inch meatballs and place on one side of the sheet pan.
- Toss Vegetables: In a separate bowl, toss broccoli and or cauliflower, bell pepper, zucchini, and onion with olive oil, salt, pepper, and Italian seasoning. Spread vegetables on the other side of the sheet pan.
- Bake: Roast for 20–25 minutes, turning meatballs and stirring vegetables halfway, until meatballs are cooked through and veggies are tender.
- Toss & Serve: Toss. Garnish with extra parsley or Parmesan if desired. Serve with rice, quinoa, or a simple green salad. (optional)
