Ingredients

Hash

  • 2 cups butternut squash, peeled and cubed
  • 2 cups sweet potatoes or new potatoes, peeled cubed
  • 8 slices nitrate free cooked bacon, diced or crumbled
  • 1 lb. cubed cooked ham or 4 sliced sausages
  • 1 large apple, cored and diced
  • 1 cup Brussels sprouts or broccoli
  • 1/2 cup red onion, thinly sliced or chopped
  • 1/2 cup mushrooms, sliced (optional)
  • 1 bell pepper, sliced (optional)
  • 1/4 cup pecans, roughly chopped
  • 1 /12 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: 1/3 cup dried cranberries or pomegranate seeds for a burst of sweetness

Vinaigrette

  • 1 tablespoon Dijon mustard
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon onion powder
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the Oven: Preheat your oven to 425°F.
  2. Prepare the Meat, Vegetables and Fruits
    • Peel, slice and or chop vegetables. Cube cooked ham or slice up sausages. Cook bacon and dice or crumble if needed.
  3. Roast
    • Spread the mixture on a large baking sheet or roasting pan in a single layer. Drizzle with and toss with 1 1/2 tablespoons olive oil.
    • Roast in the preheated oven for 25-30 minutes or until the vegetables are tender and golden brown, stirring halfway through for even cooking.
  4. Drizzle and Toss with Vinaigrette
    • Drizzle with vinaigrette. Toss until everything is well coated.
  5. Optional: Add Dried Fruit
    • If desired, toss in dried cranberries or sprinkle pomegranate seeds over the roasted hash for a burst of sweetness and color.
  6. Serve
    • Once done, transfer the harvest hash to a serving dish.
    • Garnish with additional pecans or herbs if desired.
