Ingredients

  • 4 pounds ground beef, drained (or ground turkey for a leaner option)
  • 1 large red onion, chopped
  • 4 whole jalapeño peppers
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 cans (15 ounces) kidney beans, drained and rinsed
  • 3 can (14 ounces) stewed tomatoes
  • 1 can (8 ounces) V8 juice
  • 3/4 cup burgundy wine
  • 3 tablespoons sugar
  • 6 tablespoons vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon tabasco
  • 1/4 tsp each chili powder, ground cayenne pepper, white pepper, garlic powder, celery salt, oregano, seasoned salt, regular salt, onion salt, ground cumin, seasoned pepper

Optional Toppings

  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Avocado slices
  • Fresh cilantro

Directions

  1. Sauté Aromatics
    • In a large pot or Dutch oven or stew pot, heat olive oil over medium heat. Add chopped onions, garlic, jalapeño peppers, and bell pepper. Sauté until the vegetables are softened.
  2. Brown Ground Meat
    • Add ground beef (or turkey) to the pot. Break it up with a spoon and cook until browned, drain excess juices and fat.
  3. Seasoning
    • Sprinkle seasoning over the meat mixture. Stir well to coat.
  4. Add Tomatoes
    • Pour in stewed tomatoes and V8 juice. Stir to combine.
  5. Add Wine
    • Pour in the wine. Bring the mixture to a simmer.
  6. Simmer
    • Reduce the heat to low, cover the pot, and let the chili simmer for at least 30 minutes to allow the flavors to meld. You can simmer longer for even more depth of flavor.
  7. Add Beans
    • Pour in red kidney beans and simmer for another hour.
  8. Adjust Seasoning
    • Taste the chili and adjust the seasoning as needed. Add more salt, pepper, or spices to suit your taste.
  9. Serve
    • Ladle the chili into bowls and serve hot. Optionally, top with shredded cheddar cheese, a dollop of sour cream, chopped green onions, avocado slices, or fresh cilantro.
