Ingredients

  • 1 tablespoon olive oil
  • 1 lb. Italian sausage or ground turkey
  • 1/4 teaspoon red pepper flakes
  • 3 cloves minced garlic
  • 1 diced onion
  • 4 cups chicken broth
  • 3 thinly sliced russet potatoes
  • 2 cups finely chopped kale or spinach
  • 1 cup heavy whipping cream or milk of your choice
  • salt and pepper to taste

Directions

  1. Brown Italian sausage or ground turkey in large pot until no longer pink and drain fat
  2. Add olive oil, red pepper flakes, garlic and cook for 5 minutes until onion and garlic are translucent
  3. Add chicken broth, potatoes, and kale or spinach then bring to a low boil, turn down to simmer
  4. Simmer for 10 minutes, remove from heat and add cream
  5. Season with salt and pepper to taste
