Ingredients

For the Sauce

  • 1/4 cup hoisin sauce
  • 1 1/2 Tbsp soy sauce
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp honey or brown sugar
  • 1 Tbsp water
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 3 tsp Sriracha sauce (adjust to taste)

For the Chicken Filling

  • 1 lb. ground or chopped chicken (or turkey)
  • 2 Tbsp sesame oil
  • 1/2 tsp soy sauce
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced (~ 2 Tbsp)
  • 1 Tbsp ginger, minced
  • 1 can 8 oz sliced water chestnuts, finely chopped
  • 2 Tbsp green onions, chopped
  • Salt and pepper to taste

For Serving

  • Iceberg or butter lettuce leaves
  • Additional green onions, chopped
  • Chopped cilantro and mint (optional)
  • Crushed peanuts (optional)
  • Bean sprouts or fried mung bean noodles (optional)

Directions

  1. Prepare the Sauce: In a bowl, whisk together all the sauce ingredients. Adjust the Sriracha for desired spice level.
  2. Cook Chicken Filling: In a large skillet, heat vegetable oil over medium-high heat. Add ground chicken and cook until browned. Remove excess fat if needed.
  3. Add Aromatics: Add chopped onion, garlic, and ginger to the chicken. Sauté until onions are translucent.
  4. Incorporate Vegetables: Stir in water chestnuts. Cook for 2-3 minutes.
  5. Combine Sauce: Pour the prepared sauce over the chicken mixture. Stir well to coat evenly. Cook for an additional 2-3 minutes.
  6. Finish and Serve: Remove from heat and stir in green onions. Spoon the chicken mixture into lettuce leaves. Garnish with additional green onions, cilantro, mint, and crushed peanuts if desired. Serve on a bed of bean sprouts or fried mung bean noodles inside a lettuce wrap if desired.
