Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3-4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika (optional, for added flavor)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Directions

  1. Prepare the Chicken
    • Pat the chicken breasts dry with paper towels.
    • Season both sides with salt, pepper, and paprika (if using).
  2. Sear the Chicken
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken and set aside.
  3. Make the Sauce
    • Lower the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
    • Pour in the chicken broth and scrape the bottom of the skillet to deglaze and release any browned bits.
    • Stir in the heavy cream and Parmesan cheese, whisking until the sauce is smooth and creamy.
  4. Add Vegetables
    • Stir in the sun-dried tomatoes and fresh spinach. Cook for 2-3 minutes, until the spinach wilts and the tomatoes soften.
    • Add Italian seasoning and adjust salt and pepper to taste.
  5. Combine Chicken and Sauce
    • Return the seared chicken breasts to the skillet, spooning the sauce over the top.
    • Simmer for 3-5 minutes to warm the chicken and allow the flavors to meld.
  6. Garnish and Serve
    • Sprinkle with fresh parsley before serving.
