Hearty nachos recipe

Cheesy, spicy nachos that are perfect for any gathering.

These nachos are the perfect combination of crispy tortilla chips, melted cheddar and Monterey Jack cheeses, and a variety of optional toppings like black or pinto beans, diced tomatoes, olives, jalapeños, and green onions. The addition of ground beef or shredded chicken adds protein and richness. The contrast of textures and flavors—salty, savory, spicy, and fresh—makes every bite delightful. Serve these nachos with sides of sour cream, salsa, and guacamole for dipping. They are perfect for game day, parties, or as a fun family snack anytime you want a satisfying and shareable treat.

Ingredients

  • 1 bag of tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black or pinto beans, drained and rinsed (optional)
  • 1 cup cooked ground beef or shredded chicken (optional)
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream, salsa, and guacamole or avocado for serving
    (I like to mix the salsa and sour cream or add a chipotle hot sauce to the sour cream for drizzling)

Directions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Layer Chips and Cheese: On a large baking sheet, spread out a layer of tortilla chips. Sprinkle half of the cheddar and Monterey Jack cheeses over the chips.
  3. Add Toppings: Evenly distribute the beans (if using), ground beef or chicken (if using), diced tomatoes, black olives (if using), jalapeños (if using), and green onions over the cheese layer.
  4. Top with More Cheese: Sprinkle the remaining cheese on top of the nachos.
  5. Bake: Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
  6. Garnish: Remove from the oven and sprinkle with fresh cilantro (if using).
  7. Serve: Serve the nachos with sides of sour cream, salsa, and guacamole.
