Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (6 oz) package of stuffing mix, prepared according to package instructions
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1 cup frozen mixed vegetables (optional)
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • 1 tablespoon fresh parsley, chopped

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the chicken breasts in a greased 9×13-inch baking dish. Season with salt and pepper.
  3. In a bowl, mix the condensed soup, sour cream, parsley and water until well combined.
  4. Spread the soup mixture evenly over the chicken breasts.
  5. If using, sprinkle the frozen mixed vegetables on top.
  6. Prepare the stuffing mix according to package instructions, then spread it over the vegetables (or directly over the soup mixture if not using vegetables).
  7. Cover the dish with foil and bake for 30-35 minutes, or until the chicken is cooked through.
  8. If desired, uncover and sprinkle shredded cheese over the stuffing during the last 5 minutes of baking.
  9. Let it cool slightly before serving.
