Hearty Beef and Vegetable Kabobs

Ingredients

  • For the Kabobs
    • 1.5 lbs. beef sirloin or tenderloin, cut into 1-inch cubes
    • 1 red bell pepper, cut into 1-inch pieces
    • 1 yellow bell pepper, cut into 1-inch pieces
    • 1 zucchini, sliced into thick rounds
    • 1 red onion, cut into wedges
    • Cherry tomatoes
    • Mushrooms, whole or halved
    • Wooden or metal skewers (if using wooden, soak them in water for 30 minutes before grilling)
  • For the Marinade
    • 1/4 cup olive oil
    • 2 tbsp soy sauce
    • 2 tbsp Worcestershire sauce
    • 3 cloves garlic, minced
    • 1 tbsp balsamic vinegar
    • 1 tbsp fresh lemon juice
    • 1 tsp dried oregano
    • 1 tsp smoked paprika
    • Salt and pepper to taste

Directions

  1. Marinate the Beef
    • In a bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, garlic, balsamic vinegar, lemon juice, oregano, smoked paprika, salt, and pepper.
    • Add the beef cubes to the marinade, toss to coat well, and cover. Marinate in the refrigerator for at least 30 minutes, ideally 1-2 hours.
  2. Prepare the Vegetables
    • While the beef marinates, prepare the vegetables. Try to cut them into similar-sized pieces for even grilling.
  3. Assemble the Kabobs
    • Thread the marinated beef and vegetables onto the skewers, alternating between meat and vegetables. Don’t overcrowd the skewers, so everything cooks evenly.
