Ingredients
- 1 lb. boneless, skinless chicken breasts or thighs, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 2-4 tablespoon sesame oil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons sesame oil, divided
- 1 bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 medium carrot, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 cup broccoli florets or zucchini
- Cooked rice or noodles, for serving
- Sesame seeds and chopped green onions, for garnish
Directions
- Marinate the Chicken
- In a bowl, combine the soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Add the sliced chicken and toss to coat. Let it marinate for 15-20 minutes.
- Stir Fry the Chicken
- Heat 1-2 tablespoons of sesame oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken and stir fry until cooked through and nicely browned. Remove the chicken from the skillet and set aside.
- Cook the Vegetables
- In the same skillet, heat the remaining 1-2 tablespoons of sesame oil.
- Add the carrot, bell pepper, onion, garlic, and ginger. Stir fry for 2-3 minutes until the vegetables start to soften.
- Combine and Finish
- Add the broccoli florets to the skillet and stir fry for another 2 minutes, until they are bright green and tender-crisp.
- Return the cooked chicken to the skillet and toss everything together until well combined and heated through.
