Ingredients
- 1 1/2 cups finely diced sweet bell peppers (a mix of colors for visual appeal)
- 1/4 cup finely diced jalapeños (adjust to taste for spice level)
- 1 1/2 cups white vinegar
- 6 1/2 cups sugar
- 6 ounces liquid pectin
- 1 drop of either red or food coloring (optional) — I don’t use the food coloring.
Directions
- Prepare Jars
- Sterilize glass jars and lids by placing them in boiling water for 10 minutes or running them through a dishwasher.
- Prepare and Blend Peppers and Vinegar
- Remove seeds and membranes from the bell peppers and jalapeños.
- Blend peppers and vinegar in a blender or a food processor until smooth.
- Combine Ingredients
- In a large pot, Add pepper blend and sugar. Heat on medium-high heat, stir until sugar has dissolved.
- Bring to a boil and boil for 3 minutes.
- Add pectin. Stir well. Return to a full boil and boil hard for 1 minute.
- Remove from heat and skim off the foam.
- Fill Jars
- Pour the hot pepper jelly into hot sterilized jars, leaving about 1/4 inch headspace.
- Seal and Store
- Wipe the jar rims, place lids on, and screw on the bands until fingertip-tight. Process the jars in a boiling water bath for about 10 minutes to ensure proper sealing.
- Cool and Store
- Allow the jars to cool, and check for proper seals. Store in a cool, dark place. Refrigerate after opening.
