Hearty Pepper Jelly

Pepper Jelly is a delightful and versatile condiment with a perfect blend of sweet and spicy flavors.

Pepper jelly is a culinary secret weapon, adding a sweet and spicy kick to both everyday meals and festive gatherings. Brush it on grilled chicken for a caramelized glaze or mix it with cream cheese for a crowd-pleasing dip. Ingredients

  • 1 1/2 cups finely diced sweet bell peppers (a mix of colors for visual appeal)
  • 1/4 cup finely diced jalapeños (adjust to taste for spice level)
  • 1 1/2 cups white vinegar
  • 6 1/2 cups sugar
  • 6 ounces liquid pectin
  • 1 drop of either red or food coloring (optional) — I don’t use the food coloring.

Directions

  1. Prepare Jars
    • Sterilize glass jars and lids by placing them in boiling water for 10 minutes or running them through a dishwasher.
  2. Prepare and Blend Peppers and Vinegar
    • Remove seeds and membranes from the bell peppers and jalapeños.
    • Blend peppers and vinegar in a blender or a food processor until smooth.
  3. Combine Ingredients
    • In a large pot, Add pepper blend and sugar. Heat on medium-high heat, stir until sugar has dissolved.
    • Bring to a boil and boil for 3 minutes.
    • Add pectin. Stir well. Return to a full boil and boil hard for 1 minute.
    • Remove from heat and skim off the foam.
  4. Fill Jars
    • Pour the hot pepper jelly into hot sterilized jars, leaving about 1/4 inch headspace.
  5. Seal and Store
    • Wipe the jar rims, place lids on, and screw on the bands until fingertip-tight. Process the jars in a boiling water bath for about 10 minutes to ensure proper sealing.
  6. Cool and Store
    • Allow the jars to cool, and check for proper seals. Store in a cool, dark place. Refrigerate after opening.
