Hearty Beef Tips in Red Wine Sauce

Ingredients:

  • 1 ½ lbs (680 g) beef sirloin or tenderloin, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 cup (240 ml) dry red wine (such as Cabernet Sauvignon or Merlot)
  • 1 cup (240 ml) beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • 1/8 teaspoon nutmeg
  • 1 bay leaf
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and fresh ground pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Beef:
    • Season the beef tips with salt and pepper.
  2. Brown the Beef:
    • In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
    • Add the beef tips in batches (avoid overcrowding the pan) and brown them on all sides, about 4-5 minutes per batch.
    • Remove the beef tips from the pan and set aside.
  3. Cook the Onions and Garlic:
    • In the same pan, add the chopped onion and cook until it becomes translucent, about 5 minutes.
    • Add the mushrooms and minced garlic and reduce heat to medium low and cook for an additional 4-5 minutes until fragrant.
  4. Deglaze the Pan:
    • Pour in the red wine, stirring to scrape up any browned bits from the bottom of the pan.
    • Let the wine simmer for about 5 minutes, reducing slightly.
  5. Prepare the Sauce:
    • Add the beef broth, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, nutmeg and bay leaf to the pan. Stir to combine.
    • Return the beef tips to the pan, along with any accumulated juices.
    • Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 1 hour, or until the beef is tender.
  6. Thicken the Sauce:
    • In a small bowl, mix the butter and flour together to form a paste (known as a beurre manié).
    • Gradually stir the beurre manié into the simmering beef and sauce mixture. This will thicken the sauce. Cook for an additional 5-10 minutes until the sauce reaches your desired consistency.
  7. Adjust Seasonings:
    • Taste and adjust the seasoning with salt and pepper if needed.
  8. Serve:
    • Remove the bay leaf before serving.
    • Garnish with fresh chopped parsley.
    • Serve the beef tips and red wine sauce over mashed potatoes, rice, or egg noodles.
